Tomate tatemado, cebolla, chile serrano, pepita molida y cebollín.

Tomato burned, onion, serrano pepper, ground pumpkinseed and chives.

1st Course – 1er Tiempo
Sopa Maya

Salteado flor de calabaza, cebolla, crema de maíz (Chaya).

Sautéed pumpkin flower, onion, corn cream (Chaya).

2nd Course – Segundo Tiempo
Crocante de Huitlacoche y queso (Pakach, bi hua)

Tortilla de maíz hecha a mano rellena de huitlacoche, flor de calabaza, calabaza local, queso artesanal y granos de elote, acompañados con una salsa de la casa (Kuutibi pak).

Handmade corn tortilla filled with huitlacoche, pumpkin flower, local pumpkin, artisan cheese and corn kernels, accompanied with a house sauce (Kuutibi pak).

3rd Course – Tercer Tiempo
Tamal Nonoch, hua, Janna yun chak

Tortilla envuelta de hierba santa, hojas de plátano rellena de una salsa de masa preparada con achiote, pollo, cebolla, tomate, pepita de calabaza.

Tortilla wrapped in holy grass, banana leaves stuffed with a dough sauce prepared with achiote, chicken, onion, tomato, pumpkin seed.

4th Course – Cuarto Tiempo
Tikin Shik

Filete de pescado envuelto en hojas de plátano, marinado con una salsa maya de achiote, naranja agria, cebolla, pimiento, tomate, servidos en su jugo.

Fish fillet wrapped in banana leaves, marinated with a Mayan sauce of achiote, sour orange, onion, pepper, tomato, served in its own juice.

Desserts – Postre
Dulce de calabaza (Chujuk kum)

 Calabaza local o de milpa pasado en cenizas piloncillo y canela.

Local or cornfield squash passed in brown sugar and cinnamon ashes.
