PAK´ACHBIL WAAJ

Crispy Huitlacoche and cheese.
Handmade corn tortilla filled with huitlacoche, pumpkin flower, local pumpkin, artisan cheese and corn kernels, accompanied with a house sauce (K´utbil p´aak – Tomato sauce made in a wooden mortar)

TAMAL NUKUCH WAAJ, U JAANAL YUUM CHÁAK

Ceremonial tamale, the food of the Rain God
Tortilla wrapped in holy grass, banana leaves stuffed with a dough sauce prepared with achiote, chicken, onion, tomato, pumpkin seed.

4th COURSE
TIKIN XIIK´

Fish fillet wrapped in banana leaves, marinated with a Mayan sauce of achiote, sour orange, onion, pepper, tomato, served in its own juice.
